Lindsay Nixon has written some of the best Vegan Cookbooks I have ever used. The recipes are quick, simple and low-fat, and, with only a couple of exceptions, use common,everyday ingredients that anyone could find and use. Plus they are delicious. She makes the best Tofu Scramble recipe I have ever had! From wraps to salads to smoothies, burgers to pancakes to pasta to simple side dishes and desserts, it's all here. This is a must-have for your vegan bookshelf. Note: this is a review of the whole happy herbivore series, not just the individual " Happy Herbivore Light & Lean" book itself.
